Summer may be on its way out, but that’s not stopping Ample Hills Creamery from opening its first ice cream shop in Jersey City.

The Brooklyn-based ice cream shop is expected to open in the “next few weeks” and is in the process of hiring staff for its new waterfront shop.

Ample Hills Creamery is renown for its small batch ice cream and ice cream cakes made with over-the-top flavors like Ooey Gooey Butter Cake, Pumpkin Cheesecake, and Snap, Mallow, Pop. It’s the official ice cream of the Star Wars film franchise with two Star Wars flavors expected to debut this December.

In addition to its Jersey City shop, the company is poised to open a 15,000 square foot factory in Red Hook, Brooklyn, where they plan to produce 1 millions gallons of ice cream annually.

Ample Hills Creamery will be located at the base of the Jersey City Urby tower at 200 Greene Street.
