Corto Will Soon Bring the Flavors of Piemonte to the Heights

Italian cuisine is more than just pizza and spaghetti.

Food in Italy’s Piemonte region, for instance, tends to be more rustic and based on traditional peasant activities like making cheese, raising cattle, and producing wine. Here food is grown locally by farmers with little to no additives. It’s precisely that type of rural cuisine that Corto will soon bring to Jersey City Heights.

Located at 507 Palisade Avenue, the forthcoming restaurant is the brainchild of partners Drew Buzzio, Marc Magliozzi, and Peter Fontana. Magliozzi is the owner of Dozzino, a Hoboken institution specializing in wood-fired pizza. Meanwhile, Buzzio has an extensive culinary background deeply rooted in tradition and along with his family operates New York’s classic Italian delicatessen, Salumeria Biellesse, and Chelsea-based restaurant, Biricchino.

At Corto, the three partners will focus on peasant dishes from the Piemonte region of Italy. You’ll also find a few dishes from Lazio, which are the two regions where the three owners hail from.

Buzzio and company hope to open Corto in February of 2018. Stay tuned for more details.
